I, personally, am not a fish eater.  It is not from my parent’s dislike of fish that I don’t like it as they enjoy salmon and other fish regularly. And I have even been forced to try fish but at the end of the day I simply do not like it.  Too bad for me as salmon truly wins in the Dr. Tavel Eye Healthy Food Challenge in its eye health abilities as well as overall health benefits.

Pair grilled salmon with a large spinach salad including eye healthy nuts and fruits and you can truly multiply the eye healthy nutrients in just one meal. Dr. Tavel, like many other Indiana eye doctors, would definitely approve of a meal like the one below for its multiple eye healthy foods and benefits!

Grilled Salmon

  • 1 1/2 pounds salmon fillets
  • lemon pepper to taste
  • garlic powder to taste
  • salt to taste
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/3 cup water
  • 1/4 cup vegetable

Strawberry Spinach Salad

  • 2 tablespoons sesame seeds
  • 1 tablespoon poppy seeds
  • 1/2 cup white sugar
  • 1/2 cup olive oil
  • 1/4 cup distilled white vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • 1 tablespoon minced onion
  • 10 ounces fresh spinach – rinsed, dried and torn into bite-size pieces
  • 1 quart strawberries – cleaned, hulled and sliced
  • 1/4 cup almonds, blanched and slivered
