Dr. Tavel Eye Healthy Food Challenge: Spinach and Avocados

{{{image-476}}}One of my other favorite dishes or meals?  Tacos and quesadillas!  More good news for me in the Dr. Tavel Eye Healthy Food Challenge as these are approved with the right extras: spinach and avocados.

Spinach is definitely an eye health food as it has luetin and Vitamin E, nutrients helping our eyes see clearly and delay cataracts.  Eye care doctors definitely approve of spinach.  Avocados are simply a power food.  They have many positive nutrients that help our bodies function properly.  In this case, avocados have luetin and Vitamin A and lots of it!  They also have certain fats helping our bodies soak up the needed eye healthy benefits of this food strengthening vision and delaying sight robbing diseases like cataracts and age-related macular degeneration.

Add spinach to your tacos and quesadillas instead of ice berg lettuce and load on the guacamole!  Make a great Mexican-Taco salad with spinach as your base lettuce, chopped tomatoes (great for eye health with lycopene reducing the levels of free radicals in our blood), and top with avocado chunks or a basic avocado dressing (puree chunks of avocado, add lemon juice, olive oil and some seasonings such as eye healthy garlic, salt, and pepper.)
