It is pumpkin season as the vegetable, a part of the squash family, is popularly used for the Halloween tradition of Jack-o-Lantern’s and soon for the traditional dessert at Thanksgiving in November.  Halloween is almost officially here and as last minute carving and costume planning takes place remember to save your Jack-o-Lanterns after this spooky holiday-no pumpkin smashing please! 

Found in seasonal drinks at your local coffee shop and of course at bakeries, pumpkins are the popular choice for treats every fall and this is approved by the Dr. Tavel Eye Healthy Food Challenge!  Pumpkins are full of beta-carotene (the nutrient found in the eye healthy carrot) and vitamin C which helps our eye sight stay sharp and prevent macular degeneration according to the article “Diet and Nutrition Tips for Optimal Health.”

Eating foods rich in beta-carotene and vitamin C often is a suggestion from eye care doctors to help maintain clear vision.  So to be economically savvy, save your Jack-o-Lantern’s (or buy pumpkin supplies possibly at reduced prices after Sunday?) and make some pumpkin eye healthy treats!
