The Dr. Tavel Eye Healthy Food Challenge is on!  First up…the mighty powerful edible egg.  Vision eye centers everywhere should be telling patients to crack an egg each morning to eat for eye health!  Eggs provide the best source of Lutein and Zeaxanthin, vitamins that help in keeping the eyes strong and vision clear.  They are also a wonderful source of protein.

By eating an egg each morning or day-scrambled, poached, boiled or fried-you are directly helping to reduce your risk in developing macular degeneration as mentioned in the article “Diet and Nutrition Tips for Optimal Eye Health.”  Macular degeneration is the leading cause of blindness for adults over the age of 55.  You are also helping to reduce your risk for cataracts.  A double bonus from one small oval-shaped food!

My roommate, Joanna, is much better at including this eye healthy food in her diet each day as she tends to prepare herself eggs with an array of other eye healthy vegetables.  I have followed suit a few times by making scrambled eggs (the only egg variety I know how!) with mushrooms and tomatoes but this doesn’t compare to Joanna’s recipe.  Her better option is adding yellow vegetables known to aid in eye health such as yellow bell peppers and green leafy ones like spinach to her eggs.  This dish without much added salt is a winner in the eye health category as well as the overall health category as these nutrients give the body energy, help with vision, and aid the immune system.

The best eye doctors should “prescribe” recipes like this one for patients to consume to aid in their eye health!

Eye Healthy Egg Recipe (Joanna’s and Katie’s Mixed!):
Scrambled Eggs with Spinach and Veggies of Choice!
2 eggsCrack eggs; Whisk eggs with milk in bowl
2 TB of milkPour eggs in heated skillet (on MH heat) then turn down heat to ML
1/2 cup of chopped spinach (eye healthy)Add veggies, salt/pepper to taste
1/4 cup of mushrooms slicedScrape eggs from edge of pan to center, turning over
1/4 cup of onionsIf liquid is gone from pan and eggs look wet, empty on plate
1/4 cup of grape tomatos sliced in half (eye healthy)Toast whole-wheat bread, add topping of choice
Greased skillet with butter or sprayOrange Juice (to drink) Vitamin C to help eyes!

This is an easy and quick recipe option for an eye healthy breakfast or meal at any time of the day!  Substitute other eye healthy foods: yellow bell pepper, garlic, salmon, turkey, corn, and broccoli.
